Pepe rosa, or pink pepper, is not actually pepper. Unlike black, white and green pepper, which are the fruits (processed differently) of Piper nigrum, pink pepper is the fruit of the Shinus molle tree, of Latin American origin. This fruit, of course, has the characteristic pink color and is very similar in shape to that of pepper, hence its name, although its taste is completely different, much sweeter and more delicate. Its aroma combines sweetness with a spicy sensation and notes of strawberry and lemon.
Ideal for flavoring meat dishes, fish, vegetables, salads but especially swordfish, tuna or salmon carpaccio. Also a wonderful ingredient in sauces based on yogurt, butter, mascarpone, fruit, chocolate and many others. Its rich and bright color adds elegance and liveliness to your dishes, decorating e.g. risotto or special desserts.
We recommend an easy sauce with Pepe Rosa to garnish your creations with originality and at the same time giving extra flavor and aroma!
Ingredients: 50g butter, 4 teaspoons grated pepe rosa, 1 teaspoon peperoncino powder, 2 grated sun-dried tomatoes, 2 teaspoons fresh cream.
Melt the butter in a small saucepan and add the pink pepper, peperoncino and sun-dried tomatoes. Cook for 1-2 minutes over low heat, stirring constantly and at the end add the cream.
