Giant Lobster Tortelloni
Ingredients for 2 people:
Giant Lobster Tortelloni, 3 Prasso Sticks, Krema Galaktos, Smoked Salmon, Vodka or Tsipouro, Red Cayenne Pepper.
Preparation:
Cut the prasso into very small, thin pieces (do not use the tough, green part). In a large skillet large enough to hold the pasta, heat some butter and pour in the Prasso, chopped into very small pieces, in generous quantities, being careful not to burn it. After a few minutes, add the Krema Galaktos and mix. Once the prasso has wilted, add the smoked salmon, chopped into small pieces. To soften the salmon’s aroma, add a small shot of vodka or tsipouro. Meanwhile, cook the pasta. Pour it into the pan with the sauce and stir for 4 minutes. Garnish the edge of the plate with red cayenne pepper and serve.
