Calabrian specialty, with an intense aroma, particularly spicy and very soft texture, to the point of being spread on bread. From the shoulder and belly of pork, with roasted hot peppers that give it its intense red color and a mixture of spices.
Its ingredients are cut very finely and “kneaded” until it is homogenized and creamy. It is then placed in a natural casing and lightly smoked. This is followed by the maturation phase for 3-6 months, depending on its size.
It is delicious spread on a slice of grilled bread but of course it is also very suitable as a garnish on pizza, pasta, as an ingredient in sauces, omelettes or on slices of semi-ripened cheese. It is accompanied by the dry red Nero Marone.
