Ingredients for two:
200g Linguine, 200g cherry tomatoes, 12 shrimp, 1 clove of garlic, chili pepper, extra virgin olive oil, salt, pepper, parsley.
Preparation: Clean the shrimp before cooking as follows:
Rinse them, remove the head and legs, remove the shell (optional; leave the tail on if desired), and make a cut along the back with a small knife or toothpick to remove the black intestinal filament.
In a non-stick pan, prepare the sauce by sautéing the finely chopped garlic in oil.
Add the halved cherry tomatoes, season with salt and pepper, and cook for a few minutes over high heat. Add the shrimp and cook for a few more minutes. Then turn off the heat.
Put the pasta water on the stove, and when it boils, add the linguine. Drain the pasta when it’s al dente, reserving a little of the cooking water if needed. Pour the linguine into the pan with the previously prepared sauce and stir vigorously and quickly.
Plate, garnish with freshly chopped parsley, and serve immediately!
