Extremely tasty sausage, made from pork cheek with salt and spices, such as black and red pepper, thyme, fennel and garlic.
It is handmade in the winter months and has a firm texture with an intense flavor. It is salted and seasoned abundantly and left to mature for at least 3 months, during which a delicious and crispy crust is formed.
A key ingredient in the original recipe for the traditional Carbonara dish but of course also as an appetizer, in other pasta dishes, in soups, in sauces, in peas and more. It is accompanied by Lambrusco Chiarli and Pinot Nero Torrevilla.
