It is made from pasteurized cow’s milk, salt and rennet.
It has an intense and spicy taste. The crust is hard, gray in color and not eaten.
The interior tends to crumble easily and is characterized locally by the presence of green edible mold.
Ideal combination with raw or cooked vegetables but also with fresh or dried fruits. Also with honey, chocolate and jams. It goes well with aged red wines of rich structure and with trappist beers.
