Famous cold cuts, with the first written evidence of its production dating back to 1200 AD. Like Prosciutto Crudo, it is made from pork leg.
Aromatic, from smoking with beech wood, the leg is opened and sprinkled with a mixture of salt and pepper, rosemary, juniper and bay leaf, in varying proportions. Naturally matured, with its average duration being about 4 months.
It goes very well with recipes with artichokes, asparagus, pumpkin, legumes and of course with various cheeses and cold cuts. As well as with melon, figs, apples and wines such as Nero d’Avola.
