Famous salami from the Abruzzo and Molise regions. It has a uniform texture and a characteristic red-orange color due to the presence of fennel.
Coarsely ground lean pork, long-matured, with fennel and wild fennel seeds. Complex aroma, sweet and spicy taste with hints of spices, softened by the sensation of freshness given by fennel.
It is wrapped in a natural pork casing and tied by hand.
It is combined with cheeses such as Caciocavallo, with steamed potatoes, with ripe tomatoes, in sandwiches and of course on pizza. It goes well with full-bodied and slightly aged wines, such as Chianti Castellare and Nero Marone.
