The complete absence of chemical preservatives and other additives is evident.
This allows for an explosion of flavors and aromas achieved during the long natural maturation of 18 months.
It is produced from pigs from specific areas and of a specific age and weight, which are fed only with pure products, such as corn, barley and whey from the production of Parmigiano Reggiano. The maturation is done exclusively with salt and with the dry and mild climate of the Parma region.
It is ideally combined with melon or figs, in cold cuts/cheese plateaus and others. It is accompanied by red sparkling wines, such as Lambrusco Chiarli.
