An introduction to haute cuisine, the marriage of black truffle with Parmigiano Reggiano PDO. Here a light sauce is needed to appreciate the taste and aroma of the truffle. One idea is a pesto of Aegina pistachios without the shell, with oil, salt, black pepper and Parmigiano.
