A fine product of the village of Zibello in the wider Parma area, which with its particular climate – cold and foggy winters with hot summers – offers the ideal maturation. To ensure the quality and preservation of its characteristics, the Consorzio per la tutela del Culatello di Zibello was created, i.e. a cooperative specifically for this purpose.
Exclusively from the softest part of the pork leg and from animals of a certain age that feed on organic products. The meat is worked by hand and its production is strictly carried out during specific months.
After being spread and “massaged” with salt and spices, it is tied and left to rest. It is then untied and placed in a pork bladder where it is sewn and tied again. The maturation process follows, approximately one to one and a half years, initially in a dry environment and room temperatures and then in humid and cold conditions. The temperature, humidity and ventilation of the space are carefully regulated.
Soft in texture, red in color, it is slightly salty with a characteristic delicate flavor and aroma.
It is eaten cut into thin slices and accompanies pickles, soft cheeses such as Ricotta but also matured ones such as Grana Padano, Provolone, Parmigiano Reggiano. It goes very well with Lambrusco Chiarli and Montepulciano d’Abruzzo.
