A firm, sweet-tasting, aromatic cured meat. Made from pork fat, it is naturally aged with a mixture of salt, pepper, and spices (cinnamon, cloves, nutmeg). It is wrapped in a non-edible natural casing and left to age for 3 to 6 months under controlled temperature and humidity conditions.
It is served in very thin slices and is ideal as an appetizer, on a cold cuts/cheese platter, in a salad with fennel and olives, with fruit, and more. It is accompanied by sparkling wines, such as the wonderful Prosecco Valdizze.
