How to cook them:

Cooked and frozen razor clams are best eaten by gently thawing them (preferably in the refrigerator), rinsing them thoroughly, and then using them in quick recipes such as sautéed with garlic, chili pepper, and parsley, baked au gratin, added to risotto or pasta dishes, or simply served with oil and lemon after briefly steaming or boiling them. Be careful not to overcook them, as they will become rubbery.
Preparation:
Transfer the razor clams from the freezer to the refrigerator 12 hours in advance, or thaw quickly under cold running water, but preferably the day before.
After thawing, rinse thoroughly under cold running water to remove any impurities.
